Raw Sprout Clementine Cranberry Stilton & Walnut Winter Salad

At this time of year there are always certain ingredients that appear and there are certain recipes they will be used for. Think sprouts, walnuts, clementines, cranberries, Stilton cheese. I have been making a real effort to use these ingredients in a modern, less predictable way.

I enjoy creating winter salads in particular. Something fresh and light to enjoy alongside a plate of baked ham, leftover turkey or some cold stuffing – my favourite.

Having made my kale, roasted cranberry, pomegranate and smoked almond salad last winter I decided I wanted to make use of the beautiful bittersweet pop of roasted cranberries again. If you haven’t ever tried roasted cranberries I urge you to try them out. They will also be appearing in a featured post in early December too, they are that good.

This is a salad that is economical and thrifty for the festive season. You will be likely to have these ingredients lying around but you may not have used them in this refreshing raw sprout, clementine, cranberry, Stilton and walnut winter salad.

Before I tell you the recipe, you might like to read my Christmas vegetable strudel recipe which includes some of the ingredients used in this recipe and is another example of how to use festive ingredients in a new fashion.

Raw Sprout Clementine Cranberry Stilton & Walnut Winter Salad

A perfect salad to use up Christmas leftovers

Ingredients

  • For the dressing:
  • 1 tsp cider vinegar
  • 1 tbsp olive oil
  • 1 tsp wholegrain mustard
  • 1 clementine juice only
  • salt & pepper
  • For the salad:
  • 250 g Brussel sprouts sliced thinly
  • 1/2 bag prepared kale washed and de-stalked
  • 1 clementine peeled and segmented
  • 50 g Stilton crumbled
  • a handful of walnuts broken into pieces broken into pieces
  • 75 g roasted cranberries. To roast- place 150g frozen/fresh cranberries in a bowl coat in 1tbsp olive oil and 1tbsp sugar. Transfer to a lined baking tray and roast in a hot oven for 15 minutes. Leave to cool before serving (save the leftover cranberries for another salad or double up the recipe)

Instructions

  1. For the dressing:
  2. Place all of the ingredients into a bowl/jug and whisk together
  3. For the salad:
  4. Blanch the sprouts and the kale for 30 seconds in boiling water then drain and leave to cool
  5. Place the cooled sprouts and kale into a salad bowl. Top with the remaining ingredients
  6. Pour over the dressing and mix thoroughly before serving

Recipe Notes

For vegans, you could replace the Stilton cheese with avocado.
This salad is a great partner to cold meats and also to savoury tarts.

    Your salad looks delicious. I love the addiction of Stilton. I am kind of addicted to walnuts and I eat them every day whenever I feel hungry. I find that they fill you up so easily. Lovely recipe.

    This looks lovely, a great lighter dish in a season of decadence. I put sprouts in salads quite a fair bit last year – must be time to start buying them again. I love roasting them.

    My sister adores sprouts so we cannot have Christmas dinner without them but I’m not usually a fan. These looks great though!
