After my first experiment with a green smoothie, I thought I would try my hand at making a supergreens soup. All the goodness of a green smoothie but in soup form. What turns a green smoothie into a soup? Heat. That is where my Froothie comes into it’s own. Hot soup blended to perfection within five minutes.
The only thing I would recommend you do is to pre-blanch the green vegetables before blitzing to soup perfection. Having tried to make soups in my Froothie several times before, I have found that pre-cooking/blanching the chosen vegetables makes for a better soup.
Without the pre-blanch I find the flavours taste raw-even when blended for several minutes-particularly when it comes to garlic, onions and spring onions to a lesser degree. There could not be a soup with more green goodness than this supergreens soup. I found the peas and the mint provided a sweetness to the soup which off sets the mineral sharpness of the kale and it produces a soup of the darkest emerald green you can imagine.

Supergreens Soup
Ingredients
- 1 head Broccoli cut into florets and the stalk peeled and chopped roughly
- 200 g Frozen peas
- 100 g Kale washed and de-stalked
- 1 bunch Spring onions washed and trimmed then cut in half,
- 1 large Courgette sliced into discs
- 1 pint Vegetable stock
- 1 bunch Fresh mint leaves only
- Salt & black pepper
Instructions

Place the broccoli and peas into a pan of boiling water, bring the pan back to the boil, cook the veg for 2 minutes then turn off the heat and scoop out the veg. Measure 1 pint of the cooking liquid and add 1tbsp of vegetable bouillon to it to make up the required veg stock for this recipe,

In another pan of boiling water place the courgettes, spring onions and kale. When the pan comes back up to the boil turn it off immediately and drain the vegetables, you don't need to keep this veg water,

Place the broccoli and pea mixture into your Froothie and blend with 1/4 pint of the stock and half of the mint leaves plus a little salt then return the mixture to the saucepan,

Next place the kale, spring onions and courgette into the Froothie along with 1/4 pint of vegetable stock and the rest of the mint, blend well then transfer to the pan with the blended broccoli and peas and stir the two mixtures together,

Check for seasoning and use the rest of the stock to make the soup to the consistency you would like. I used almost all of the pint of vegetable stock.

Pour the soup into bowls and enjoy.

Lovely colour. We didn’t pre-cook vegetables when we did the courgette blue cheese soup or a tomato and stock one either, but those are both vegetables that work well with less cooking, so just heating them up as they whizzed made for very fresh tasting soups. Whereas for butternut squash one, we cooked the squash before adding it to the Froothie, as we didn’t think it would cook enough in the time. Such a nice way of making soups, isn’t it?
Love it for soups Kavey, there is no better or easier way to blend than a Froothie!
This is my kind of soup – and I can imagine those peas giving it a nice sweet creaminess. It also helps that I’m a sucker for broccoli and kale. And you can’t just can’t beat the colour!

Sure why not Joanne, actaully soups should all be this green. It is just the colour that occurs when soups are not over cooked!
Lovely soup Laura, I think with these blender soups it is a fine line with the pre cooking. I have a tub of fried onion in the freezer to add to them as I find it too strong otherwise.
