If there is one thing I love most about Autumn, it is the colours. Burnt oranges, russets, mossy greens and fading yellows all mingling together to form a perfect Autumnal scene with shiny nuggets of conker brown dotted amongst the falling leaves. I also take great pleasure in seeing the glorious pumpkins displayed in the greengrocers and the many varieties of ornamental gourds sitting in wooden creates outside the flower shops.
Pumpkin is not something I have been eating for very long. I used to find it watery and bland compared to butternut squash but I have come around to its charms and made one of my most successful recipes to date using this juicy orange flesh, a loaf of pumpkin bread. To go with this loaf I thought I should make a pumpkin soup. This soup incorporates the flesh of a small pumpkin along with the iron richness of kale and the mellow nuttiness of coconut milk. I pepped things up a little by adding pinch of fresh ginger and chilli.
This pumpkin, kale and coconut soup was made in my Froothie Optimum 9400, a blender with powers to make soup of the most velvety smooth texture. It can be ready in minutes once you have steamed or boiled your pumpkin pieces. Being able to knock up a soup in minutes has certainly encouraged my soup habit. What amazes me most is that the soup is hot and ready to serve in 7 minutes due to the powerful motor and the act of friction-Genius!
I have been road testing my Froothie now for a couple of months and have been so impressed with it. The biggest change, not only for me but my children have been the amount of smoothies we have been making. It has encouraged us all to increase our daily fruit intake and is also the perfect way to use up any pieces of fruit that are looking a little sad in the fruit bowl. I also keep a regular stash of chopped bananas in the freezer now purely for smoothies.
The Froothie has so far proved to exceed the expectations I had of it. I have been so close to buying one so many times but then change my mind due to their significant cost. However the Froothie is currently on offer for £329 which is significantly cheaper than its competitors.
The reason why it can make such amazingly smooth soups and smoothies is its powerful motor 2,238 watts which runs at an incredible speed of 44,000rpm. It also has a 6 stainless steel blade assembly, which enables it to crush nuts, seeds and ice into minute particles in moments. There is just the one jug which can be used for both wet and dry ingredients. The jug is easy to clean, just rinse with hot water when making smoothies. If you use it to make hot soups then place a tiny amount of washing up liquid along with some hot water into the blender and whizz it around (lid on) for a few seconds to clean it, then wipe it dry.

Pumpkin Kale & Coconut Soup
Ingredients
- 1 Small pumpkin peeled, de-seeded and chopped into medium chunks,
- 1/2 Bag of kale 100g approx washed and any chunky stalks removed,
- 1 Red chilli chopped
- 1 Small knob of ginger peeled and chopped
- 1 Clove of garlic peeled and chopped
- 1 Bunch of coriander roughly chopped
- 100 g -100g coconut cream or coconut milk
- 300 ml Warm vegetable stock
- 1 tbsp Soy sauce/Tamari
Instructions
-
Boil or steam the chunks of pumpkin for 7 minutes then strain,

Place the cooked pumpkin along with all the other ingredients into the Froothie and blend for 6 minutes until the soup is very smooth and also hot,

Check the soup for seasoning and add any salt and pepper at this stage,

Serve the soup with extra coriander (optional) and maybe a loaf of my pumpkin bread too (recipe link in post)

I’ve just cut open my first home-grown Mother Hubbard squash of the year – half has been roasted and gone into a pasta bake & I was wondering what to do with the rest. This looks like a great soup Laura, may well try it with Mother Hubbard Squash & cavolo nero.

This looks perfect. I’ve been picking up ginormous bunches of kale at the farmers’ market for the past few weeks. I’ve been making a lot of kale chips and salads but a soup is always a good bet.

Despite loving both kale and pumpkin I haven’t combined them in a soup. This sounds lovely with the creaminess of coconut, and kick from garlic chilli and ginger. Lovely. May try this today!

You are so right. Autumn is about the colours for me too. I love this combination but am thinking of trying it with the cavolo nero in my allotment which has so wonderfully returned after being eaten by the little caterpillars. I also like how you’ve added the ginger raw. I need to do this. I’ve been cooking mine off a little but raw is much healthier. Thanks for sharing Laura
Oh yes Urvashi, definitely use the cavolo nero, another green leaf I love too. It wouldn’t have occurred yo me to cook off the ginger as I love the warm hit of adding it raw. It is wonderful raw in smoothies too, especially ones with melon and citrus fruits.
