I have a confession to make. Yes, I love chocolate and even more so I adore chocolate & raisin cookies. But more to the point I love cooking with chocolate. It is a feel good food as we all know and I used to eat bucket loads of it during my three pregnancies. They say good dark chocolate is a source of iron, which always made me feel rather virtuous whilst scoffing my large bar of Lindt’s 70% by myself. It did get to be an expensive habit!
Whenever I need a recipe for anything chocolate related, I always seem to turn to David Lebovitz. He is my tried and tested sweet recipe maestro of the moment. I have made many a brownie, cookie and loaf cake following his instructions and they have all turned out to be superb. His mint chocolate brownies have given me quite a reputation, not to mention his heavenly cheesecake brownies.
I have quite a collection of dark chocoate chips in my cupboard at all times, so that I can knock up a batch of cookies when the mood takes me. These cookies are great AND you don’t have to have any eggs to hand as the recipe does not call for them, which was a surprise to me.
The recipe on David’s blog for these chocolate and raisin cookies actually comes from Clotilde Dusoulier, she of the very well known food blog Chocolate & Zucchini. I have adapted the recipe slightly. I figured that I was not likely to find ‘cocoa nibs’ down the local supermarket, so I replaced them with raisins. I think next time I may even use dried sour cherries or cranberries to counteract the sweetness of the chocolate…….

Super dark double chocolate and raisin cookies
A delicious, chocolate raisin cookie perfect for chocolate chip cookie fans
Ingredients
- 125 g plain flour
- 25 g cocoa powder
- 1/2 tsp bicarbonate of soda
- 140 g dark chocolate chips
- 50 g raisins
- 125 g unsalted butter at room temp
- 100 g light brown sugar
- 1 tsp vanilla
- pinch of sea salt
Instructions

Pre-heat the oven to 180 degrees/160 degrees for fan ovens

Melt half the chocolate (70g) in a bowl over a pan of simmering water then leave to cool

Mix the other half of the chocolate with the raisins and set aside

Beat the butter until smooth

Add the sugar, salt and vanilla extract

Add the melted and cooled chocolate

Add the sifted flour, cocoa and bicarb of soda

Stir the mixture to combine then fold in the chocolate chips and raisins

Using a teaspoon, scoop up heaped balls of the cookie dough and place on a baking tray lined with baking parchment. Push the cookie dough down to flatten, it using a fork

Bake for 10-12 minutes

These look fabulous: I will be giving them a try. I will have to replace the butter with something dairy-free but one of the joys of the best quality dark choc is that even those of us who have to avoid dairy can still have a choccie treat. You just have to choose your brands carefully. Didn’t know that dark choc is a source of iron. That’s another excuse for Mummy to enjoy her chocaholic fix!

These sound delicious and I’m particularly liking the idea of using sour cherries with them. I’m always a bit hit and miss with my cookies, so it will be interesting to see if I can mess these up 😉
I think you would find these cookies pretty easy. I always try to post ideas that are easy as I think life’s too short for complicated food!
