Following on from my last post – a Baileys latte, I give you my fully loaded Baileys cheesecake. This dessert is for those of you out there who like to choose a less traditional pudding for Christmas day.
Puddings at Christmas time are rich, heavily laden with dried fruits, warming spices and plenty of Brandy. They have a distinctive dark, full bodied flavour that I love. But, I also appreciate that it’s often a good idea to offer an alternative pudding for Christmas day – especially for the raisin loathers 😉
So, if like me, you buy your annual bottle of Baileys in December, why not try out my loaded Baileys cheesecake. Not only is it the easiest desert to make but it tastes abosolutely divine.
All you have to decide is just how you want to load your cheesecake? I like to load mine with bashed up honeycomb pieces (Crunchie bars will do), chocolate covered pretzels and bubbly balls of Aero. Some of you out there may have more sophisticated tastes but I do think cheap and cheerful chcolate works best here.
The other essential addition to this loaded Baileys cheesecake is a pot of the best salted caramel sauce you can find. The caramel gets drizzled over as a final garnish adding another layer of temptation to satify your sweet cravings.
This is a no bake cheesecake which means it can be thrown together in next to no time but it will still provide you with a wow factor dessert that everyone will love. There is nothing but excess in this dessert and a little goes a very long way. Enjoy with an iced Baileys on the side. Cheers and Merry Christmas!

Loaded Baileys Cheesecake – A speedy Christmas dessert
Ingredients
- For the base:
- 125 g digestives crushed
- 125 g Hob Nobs crushed
- 125 g butter melted
- For the cheesecake:
- 300 ml double cream lightly whipped
- 75 g icing sugar sifted
- 400 g full fat cream cheese
- 50 ml Baileys
- For the loaded topping:
- 1 jar salted caramel sauce
- A selection of chocolates of your choice broken up into bitesize pieces - I used Crunchie Aero balls and choclate pretzels. Dime bars would also be good.
Instructions

Line the base of a springform cake tin with baking parchment and butter the sides.

Place the crushed biscuits into a mixing bowl and pour in the melted butter.

Mix well then pour into the tin and push down with the back of a spoon. Refrigerate until the topping is ready.

In another bowl mix the cream cheese with the icing sugar. Next, fold in the lightly whipped cream.

Stir well before adding in the Baileys and mix thoroughly.

Take the cheesecake base out of the fridge and spread the cream cheese mixture over it, smoothing it down as you go along using a spatula.

Flatten the top surface of the cheesecakethen top it with your choclates of choice.

Refrigerate until ready to serve.

Remove the cheesecake from it's tin and place onto a serving plate.

Before serving, drizzle with a generous amount of salted caramel sauce.
Recipe Notes
This dessert will be easier to slice if you place it in the freezer for 5 minutes before serving.
