Pancake Day/Shrove Tuesday is nearly upon us. It’s this Tuesday, the 4th of March.
After my recent American Pancake recipe, I find myself creating another pancake dish for Asda. In our house there has proved to be a definite parent/child divide regarding pancakes. Us parents are in love with the American style but the three children are firm fans of the classic British style of pancake. So, this recipe I created with them in mind and after serving them up last night, I can safely say that they are in love with my latest creation. Us parents are pretty well in love with it too.
For this challenge I wanted to create a pancake dish that uses a favourite British fruit that I never seem to use enough of. The pear. Caramelise the pears in butter and maple syrup and team them with a vanilla powder and vanilla salt flavoured butterscotch sauce and you have a knockout pancake topping that appeals to all of the family. You will find yourself adding more and more of the salted butterscotch sauce as you eat your pancakes. In fact you may as well just grab yourself a spoon and eat it straight from the jug.
I used Asda’s basic pancake recipe here but amended it with the addition of cinnamon and a little melted butter, which works very well as a partner to the pears and creates a beautiful smell as you are frying your pancakes. I use butter to fry my pancakes but you could replace this with a neutral oil if you prefer. I just like the taste butter gives to the pancakes and you don’t need to use very much as long as your pan is non-stick.
My top tip to newbie pancake makers is to heat up your pan sufficiently before adding in your first pancake batter and remember that the first one or two pancakes are best used as practice ones. They do seem to get better the more you make and once the pan has hit the perfect temperature (a medium to high heat) the pancakes improve dramatically. Also, do not add too much mix to the pan. Thin delicate pancakes should cook in a couple of minutes at most. Thick doughy pancakes are unpleasant to eat!

Caramelised Pear & Salted Butterscotch Pancakes
Ingredients
- For the pancakes:)
- 125 g Plain flour
- 2 Large eggs
- 1/2 tsp Ground cinnamon
- 350 ml Milk
- 1 tbsp Melted butter
- For the salted butterscotch sauce:)
- 60 g Unsalted butter
- 120 g Soft light brown sugar
- 120 g Double cream
- 1/4 tsp Vanilla extract
- 1/2 tsp Maldon sea salt flakes
- For the caramelised pears:)
- 4 Large pears peeled cored and sliced into segments,
- A large knob of butter
- 1 tbsp Maple syrup
- Whipped cream or ice cream to serve.
Instructions

For the pancakes:)

Sift the flour and cinnamon into a bowl,

Pour the milk into a measuring jug, add in the eggs and whisk them together,

Pour the milk and egg mix gradually into the flour mixture and whisk well until you have poured in all of the liquid,

Add in the melted butter and stir to combine then pour the batter into a jug,

Heat a non-stick medium frying pan over a high heat then turn it down to medium and melt a little butter before adding your first amount of pancake batter,

Swirl the batter around so that it covers the base of the pan and then cook the pancake batter until it turns golden on the base,

Flip the pancake using a fish slice or spatula and continue to cook on the other side until golden spots begin to form,

Repeat this process until all of the pancakes are cooked,

Keep them covered in a low oven until you have made the butterscotch sauce and caramelised pears. Alternatively make the sauce and fry the pears first.

For the salted butterscotch sauce:)

Melt the butter in a saucepan over a low heat then add in all of the other ingredients,

Bring the sauce gently to the boil then turn it down to a simmer and continue to cook the sauce for five minutes,

Set the sauce aside until you need it (keep the rest in a jar in the fridge)

For the caramelised pears:)

Heat a large knob of butter in a large frying pan (big enough to cook all of the pears in one batch) than add in the pears and the maple syrup and fry them over a medium heat until the pears begin to caramelise and turn golden brown in places,

Turn the pears to ensure both sides get caramelised,

When the pears are cooked set aside until you are ready to assemble the pancakes.
Recipe Notes
These pancakes are perfect served with some whipped cream or ice cream.
