Christmas Tree Biscuits

Would you believe it. The last week of term and the homework for my Year 1 girl was to make Christmas Tree biscuits to add to the class Christmas tree. Now, I know I didn’t HAVE to do it and I am sure  many other parents didn’t, what with everything else going on. But, I thought it would be a good chance to spend some time with her AND she loves cooking. More to the point, she loves Mary Berry and junior bake off. So this is what we did…..

Christmas tree biscuits favoured with warm spices

Of course, older sister joined in too and we followed a Nigella recipe from “How To Eat”. I have used her recipe for these biscuits before It is simple and easy to put together and the girls got their hands well and truly stuck in. The recipe suggests that you can add cocoa to make them chocolatey and cinnamon if you like the flavour and warmth. I love this flavour combination so used both with excellent results.

 

Christmas Tree Biscuits

Ingredients :- Makes 60 biscuits approximately

  • 300g plain flour

  • pinch of salt

  • 1tsp baking powder

  • 1tsp cinnamon

  • 100g Stork margarine

  • 100g caster sugar

  • 2 eggs

  • 60g golden syrup

Method :-

  1. Pre-heat the oven to 160 degrees.

  2. In a bowl sift the flour, salt, cinnamon & baking powder.

  3. Rub in the margarine.

  4. Stir in 1 egg and the  golden syrup. (If the mix is too dry add the second egg a little at a time)

  5. Stir to combine using your hands then split the mixture into two balls of dough and put one in the fridge while you shape the other.

  6. Flour the surface while rolling out the dough to be fairly thin.

  7. Cut out using shapes of your choice.

  8. Lay on a baking sheet lined with baking parchment.

  9. Add your decorations of choice.

  10. Use a straw to stamp out a hole at the top through which you can later thread some ribbon/string for hanging.

  11. Bake for 12 minutes.

  12. Repeat the process with the other ball of dough until you have used up all the mixture, including re-rolling all the scraps to make more biscuits as the dough is very forgiving of being manhandled.

  13.  When cool, thread through your ribbon and hang on the tree.

    ooooh edible decorations! im sure it’s not something new, but it’s entirely new to me. i’m fascinated! does this mean you eat the decorations on boxing day or sth?

      Well these decorations are great as you can eat some on the day you make them and keep some back for the next couple of days. If you eat them after a week they will be fine too but after that they do get a bit soft. Do give them a go next year!

    Delicious and beautiful, your tree must look stunning.  I used to hate it when the boys got ‘make…’ for homework as I knew it meant an evening trying to be imaginative, your daughter is very lucky to have such a clever Mummy (and big sister!).  Jude x

    We went through two rounds of tree chocolates this year, so I’m not sure biscuits would surivive very long! But I’m determined to make them next year – these are the taste and smell of Christmas. Yum.
