Apricot Honey & Lavender Ice Cream

Before I head off to France, I wanted to tell you about a super speedy ice cream discovery. I have  just received a Froothie blender so I thought I would christen it by creating an ice cream inspired by the flavours of France. There are several fruits I relish eating when in France. Greengages, peaches, melons and apricots.

When deciding on what to add to my ice cream, I mulled over flavours and ingredients that I associate with France . Breakfast is often a home made apricot compote eaten with Fromage Frais (Petit Gervais). Lunch will include a dessert of greengages or peaches. Post evening meal will always involve a trip to one of the most incredible ice cream bars. Queues are formed by families of dedicated ice cream fans even at 10 o’clock at night. I never choose the same flavour twice but some of my favourites are  orange flower water, lavender, honey and speculoos.

I decided to recreate an ice cream that represents  the France I love. Apricot, honey and  lavender ice cream. Flowery, fruity, not too sweet yet with added silkiness and tang from the Fromage frais. This certainly encapsulates the sweet flavours I associate with holidaying in France, which has grown on me over the several years I have been visiting it’s shores.

Froothie Optimum 9400

The joy of this ice cream is the preparation stage and that is all down to the Froothie blender. This blender has so much to offer and I am only a novice, but I will be reviewing it in much more detail when I get back from holiday.  It blends at an incredible speed, is simple to put together and blitzes things you normally would throw away such as vegetable skins, pips and peel. I cannot wait to get souping with it.

Apricot lavender & honey ice cream

An ice cream made using my Froothie Optimum 9400 blender.

Ingredients

  • 350 g Apricots roughly chopped
  • 200 g Fromage Frais/Creme fraiche
  • 2 tbsp Honey I used Manuka honey
  • 1/2 tsp Dried Lavender I used Bart's

Instructions

  1. Place all of the ingredients into your Froothie, other blenders will work but at a slower speed and you may have to sieve the puree. The Froothie blends the mixture in under a minute and needs no sieving,

  2. Check the taste and add another 1 or 2 spoons of honey if you prefer a sweeter ice cream,

  3. Place the puree into an ice cream machine and freeze it for around 15-25 minutes until it is softly set,

  4. Transfer the ice cream into a plastic tub and place in the freezer until you are ready to serve it.

Recipe Notes

This ice cream works very well served with fresh raspberries but would also be a great partner to some home made apricot compote.

    wonderful flavours. I adore this combination and was planning a jam like this (I think Jude had made one so will go check for her recipe) but I think this ice cream is one I shall also be trying when the sun comes back. Happy holidays
