Place the broccoli and peas into a pan of boiling water, bring the pan back to the boil, cook the veg for 2 minutes then turn off the heat and scoop out the veg. Measure 1 pint of the cooking liquid and add 1tbsp of vegetable bouillon to it to make up the required veg stock for this recipe,
In another pan of boiling water place the courgettes, spring onions and kale. When the pan comes back up to the boil turn it off immediately and drain the vegetables, you don't need to keep this veg water,
Place the broccoli and pea mixture into your Froothie and blend with 1/4 pint of the stock and half of the mint leaves plus a little salt then return the mixture to the saucepan,
Next place the kale, spring onions and courgette into the Froothie along with 1/4 pint of vegetable stock and the rest of the mint, blend well then transfer to the pan with the blended broccoli and peas and stir the two mixtures together,
Check for seasoning and use the rest of the stock to make the soup to the consistency you would like. I used almost all of the pint of vegetable stock.
Pour the soup into bowls and enjoy.
