Loaded Baileys Cheesecake – A speedy Christmas dessert
A perfect alternative dessert for Christmas. A loaded Baileys cheesecake which is simple to prepare and a joy to eat!

For the base:
125gHob Nobs crushed
For the cheesecake:
300mldouble cream lightly whipped
75gicing sugar sifted
400gfull fat cream cheese
For the loaded topping:
1jar salted caramel sauce
A selection of chocolates of your choice broken up into bitesize pieces - I used CrunchieAero balls and choclate pretzels. Dime bars would also be good.
Line the base of a springform cake tin with baking parchment and butter the sides.
Place the crushed biscuits into a mixing bowl and pour in the melted butter.
Mix well then pour into the tin and push down with the back of a spoon. Refrigerate until the topping is ready.
In another bowl mix the cream cheese with the icing sugar. Next, fold in the lightly whipped cream.
Stir well before adding in the Baileys and mix thoroughly.
Take the cheesecake base out of the fridge and spread the cream cheese mixture over it, smoothing it down as you go along using a spatula.
Flatten the top surface of the cheesecakethen top it with your choclates of choice.
Refrigerate until ready to serve.
Remove the cheesecake from it's tin and place onto a serving plate.
Before serving, drizzle with a generous amount of salted caramel sauce.
This dessert will be easier to slice if you place it in the freezer for 5 minutes before serving.
