A crunchy nutty sweet treat!

  • 100 g Runny honey
  • 165 g Light brown sugar
  • 75 g Unsalted butter
  • 1 tsp Vanilla extract
  • 1/4 tsp Ground cinnamon
  • 1/4 tsp Sea salt flakes
  • 120 g Cornflakes
  • 150 g Roasted unsalted peanuts roughly chopped
  1. n a saucepan melt the honey, butter and sugar letting the mixture bubble away for a couple pf minutes,

  2. Take the mixture off the heat and add in the vanilla, cinnamon and seas salt flakes,

  3. Measure out the Cornflakes and chopped peanuts into a mixing bowl,

  4. Pour in the melted honey mixture and stir well to combine,

  5. Place a teaspoon of the mixture into little mini muffin/petit four cases and let the mixture set in the fridge for at least an hour,

  6. If you don't have mini paper cases just shape the mixture with your hands and form into bite size clusters,

  7. Store in an airtight container in the fridge.

Recipe Notes

These crunchy bites are perfect as a sweet snack but also could be broken up and added to your morning bowl of cereal.
