  • 40 g light muscovado sugar
  • 1 tbsp treacle
  • 1/2 tbsp golden syrup
  • 1 tbsp water
  • 50 g unsalted butter cut into cubes
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp mixed spice
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground coriander
  • 115 g plain flour
  • 1/2 tsp bicarbonate of soda
  • pinch of salt
  1. Put the sugar, syrup, treacle, water, spices and butter together in a saucepan
  2. Then bring them to the boil
  3. Stir in the flour and bicarb of soda until you have a smooth dough
  4. Pre-heat the oven to 180°C
  5. Dust a work surface with flour and roll out the dough then cut using Christmas biscuit cutters
  6. Line two baking sheets with baking parchment
  7. Arrange the biscuits on the baking sheets and bake for 10–12 minutes
  8. Decorate using coloured icing pens or royal icing placed into a piping bag with a fine nozzle
Recipe Notes

The dough will keep well in the fridge for a couple of days covered cling film. You could freeze the dough to use later, or shape the biscuits and freeze them so they are ready to bake from frozen. Just give them 2 more minutes in the oven.
