Here is a simple and easy to follow recipe which makes good use of any sourdough discard you might have after feeding your sourdough starter.

Sourdough raspberry white chocolate banana muffins
A sweet muffin recipe that makes use of suplus sourdough starter.
Ingredients
- 150 g Butter, softened
- 150 g Light brown sugar
- 2 Large eggs
- 200 g Self raising flour
- 1 tsp Baking powder
- 150 g Sourdough starter
- 1 Banana, mashed
- 75 g Raspberries, fresh or frozen
- 100 g Whie chocolate, chopped
Instructions
Mix the butter and sugar together in a food mixer until combines
Add in the eggs, one at a time, until incorcorporated into the batter
Pour in the flour and baking powder and mix well until just combined
Pour in the sourdough starter and mashed banana, mix well
Fold through the raspberries and white chocolate
Place the muffin mix into the 12 muffins cases making sure you have equal amounts in each case
Bake in a pre-heated overn at 180 degress for 23 minutes
