Teryaki Style Salmon & Stir Fried Greens

I never used to really like salmon until I tried  Teryaki salmon. It’s a fish that can so often taste too oily and flabby, leaving quite an unpleasant aftertaste. What got me back into it was cooking it in this marinade that I don’t even measure.

Yes, I do have a specific recipe for it but that does involve mixing the ingredients together and cooking the sauce before marinating the fish in it. The results are totally  amazing and everyone that tries it, falls in love with it.

But, this quick interpretation is still a must and you are much more likely (as I am) to try this out BECAUSE it is so much easier. Serving it with this super healthy stir fried kale also makes an extremely virtuous speedy supper dish. I normally serve some boiled Jasmine rice on the side but you could serve noodles with it too .

Teriyaki Style Salmon with stir fried greens

A delicious way to enjoy salmon with a marinade inspired by Japanese food.

Ingredients

  • 4 fillets of salmon
  • 6 tbsp dark soy sauce
  • 3 tbsp mirin
  • 1 inch ginger peeled and cut into thin matchsticks

For the kale:

  • 1 bag ready prepared kale washed
  • 2 tbsp sunflower oil
  • 2 cloves garlic crushed
  • 1 knob butter
  • 1 red chilli chopped for garnish. Optional.
  • 1 tbsp toasted sesame seeds for garnish

Instructions

  1. Pre-heat the oven to 200 degrees
  2. Place the salmon in a shallow dish to marinate with the Soy sauce, Mirin & ginger for 15 to 30 minutes
  3. Line a baking tray with parchment paper then place the marinated salmon on it, including the finely sliced ginger, and bake for 15 mins

  4. Blanch the kale in a pan of boiling water for 2 minutes then drain it immediately

  5. Stir fry the garlic in a little oil for 1 minute before adding in the kale
  6. Fry the kale for 2 to 3 minutes adding in a knob of butter  towards the end of the cooking time. Season well

  7. Place the cooked kale onto a serving plate and garnish with the sesame seeds and the chilli (if using). Top with the teriyaki salmon and serve immediately.

    I too started liking salmon when it was cooked with a honey soy glaze. I love salmon now any which way but way back when I just couldn’t seem to eat it plain.

    This recipe sounds really delicious and I should try it on hubby who has never taking a liking to salmon but loves teriyaki chicken.
